As with most decaffeinated coffees, the beans that are used are sourced regionally, in this case across Guatemala. All the beans used in this decaffeinated coffee are SHB , or strictly hard bean, which means that they are grown at altitudes above 1200 metres
Guatemala is the most populous of the Central American countries and has a rich and varied landscape.Coffee is grown on the fertile volcanic slopes, and is known for it’s rich flavour, full body and light acidity.Guatemala also produces some of the worlds best chocolate, and it is believed that the first chocolate was grown here by the Mayans whose amazing ruins can be seen in the country.
Swiss Water decaffeination is an amazing process. Green beans are soaked in fresh water until they are fully hydrated. Green Coffee extract is then used to draw the caffeine out of the beans, until an equilibrium is reached. The green coffee extract and the caffeine is continuously filtered through carbon filters until 99.9% of the caffeine is removed, and trapped. The whole process takes around 10 hours to complete.
