Anaerobic fermentation is a coffee processing method that involves fermenting coffee beans in an oxygen-free environment. Specially selected mature coffee cherries are depulped before being sealed in an airtight steel container with a one-way valve to prevent the entry of oxygen. During fermentation, yeast and bacteria consume the natural sugars in the coffee cherries, producing lactic acid and other organic compounds that give the coffee a distinct flavour profile.
After fermentation, the coffee is washed and 100% sun dried to remove any remaining moisture, resulting in coffee beans with unique and complex flavours.
